Ingredients

For the Salad:

½ cup Romaine, chopped

½ cup Arugula

2 Tbsp Kalamata Olives, halved

2 Tbsp Marinated Feta Cheese, crumbled

2 Tbsp Cucumber, halved and sliced

¼ cup Cherry or Grape Tomatoes, halved

2 Tbsp Artichoke Hearts, quartered

3 oz Dakota44 Snack Bites

Lemon Oregano Dressing, recipe below or store-bought

For the Dressing (makes ~1 cup):

¼ cup Lemon Juice

½ cup Olive Oil

2 tsp Honey

1 tsp Dijon Mustard

1 Tbsp Fresh Oregano, minced

1 clove Garlic, minced

½ tsp Salt

½ tsp Black Pepper

Directions

For the Salad:

  1. In a large bowl, combine romaine, arugula, olives, feta, cucumber, tomatoes, artichokes, and Dakota44 Snack Bites.

  2. Drizzle with lemon oregano dressing and toss gently to combine.

  3. Serve immediately.

For the Dressing:

  1. In a small bowl, combine lemon juice, honey, Dijon, oregano, garlic, salt, and pepper.

  2. Slowly whisk in olive oil until the dressing thickens and emulsifies.
