Bacon and Chipotle Turkey Meatloaf

Ingredients

1 lb Dakota44 83% lean ground turkey

1 Tbsp Olive Oil

½ Onion, finely chopped

1 Garlic Clove, minced

1 tsp Kosher Salt

⅛ tsp + ½ tsp Black Pepper

1 Egg, whisked

4 Tbsp BBQ Sauce, divided

1 Chipotle in Adobo Sauce, pureed

2 tsp Adobo Sauce

⅓ cup Panko Breadcrumbs

3 oz Cheddar Cheese, small diced

4–5 slices Bacon

Directions

  1. Preheat oven to 350°F. Line a baking sheet with aluminum foil and coat with nonstick spray.

  2. In a medium sauté pan, heat olive oil over medium-high heat. Add onion, garlic, ¼ tsp salt, and ⅛ tsp pepper. Sauté for about 4 minutes, until soft and translucent. Set aside to cool slightly.

  3. In a large mixing bowl, combine the egg, onion mixture, 2 Tbsp BBQ sauce, pureed chipotle, adobo sauce, remaining salt and pepper, breadcrumbs, ground turkey, and cheddar cheese. Mix until just combined — do not overmix.

  4. Form the meat mixture into a loaf shape on the prepared baking sheet.

  5. Spread the remaining 2 Tbsp BBQ sauce over the top and lay the bacon slices evenly over the loaf.

  6. Bake for 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 160–165°F.

  7. Let rest for 10 minutes before slicing and serving.

  8. Optional: Place under broiler briefly for extra crispy bacon.
