Directions
-
Preheat oven to 350°F. Line a baking sheet with aluminum foil and coat with nonstick spray.
-
In a medium sauté pan, heat olive oil over medium-high heat. Add onion, garlic, ¼ tsp salt, and ⅛ tsp pepper. Sauté for about 4 minutes, until soft and translucent. Set aside to cool slightly.
-
In a large mixing bowl, combine the egg, onion mixture, 2 Tbsp BBQ sauce, pureed chipotle, adobo sauce, remaining salt and pepper, breadcrumbs, ground turkey, and cheddar cheese. Mix until just combined — do not overmix.
-
Form the meat mixture into a loaf shape on the prepared baking sheet.
-
Spread the remaining 2 Tbsp BBQ sauce over the top and lay the bacon slices evenly over the loaf.
-
Bake for 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 160–165°F.
-
Let rest for 10 minutes before slicing and serving.
-
Optional: Place under broiler briefly for extra crispy bacon.
