                                              Homemade Turkey Summer Sausage

                                               Compliments of Wyshbone Market


  • 5 lb. Ground Turkey                                                         2 ½ tsp. Mustard Seed
  • 4 tsp. Curing Salt                                                           Scant tsp. Garlic Powder
  • 2 ½ tsp. Liquid Smoke                                                     2 ½ tsp. course ground pepper

Mix and knead for 5 minutes every day for 4 days. On the 4th day knead and bake for 7 hours at

200 degrees. I used about 4 ice cream scoops on a piece of foil and formed it into a roll and then

cooked them on a rack on a baking pan in the oven.
